Ti Leaf Wrapped Opah Featured at 2100 Bistro & Bar

It's not every day that Kauai cuisine is featured in the Evergreen State, but on Friday October 23rd, Seattle foodies enjoyed Ti Leaf Wrapped Opah (moonfish) with Chinese Black Bean Sauce and Wok Stir Fried Vegetables at 2100 Bistro & Bar at the Seattle Marriott Waterfront. It's all part of Marriott Resorts Hawaii's Aloha Friday celebrations where Chef Chris Frothingham presents an island-inspired entree each Friday in October.

Ti Leaf Wrapped Opah

Those who ordered the Kauai entree received a fresh flower lei and was entered to win a four-night stay with Marriott Hawaii.

Ti Leaf Wrapped Opah

7 oz Opah fillet
Canola oil
Salt and pepper
1 oz broth

Season fish with salt and pepper and wrap in an 8-inch long ti leaf. Add in broth and bake in oven at 350 degrees for approximately 7-9 minutes.

Chinese Black Bean Sauce

3 c Soy Sauce
1 c Sugar
3 c Oyster Sauce
3 qt Chicken Stock
3 c Garlic, chopped
5 pkgs Black Beans, soaked, rinsed, drained and salted
2 c Sherry
2 c Scallions, chopped

Saute beans, garlic and scallions in oil. Deglaze with sherry. Add remaining ingredients. Bring to a boil and thicken with cornstarch, slurred to an oyster sauce consistency.
